the greatest vegan, gluten free pancakes

I know, I know, your mouth is watering. You want pancakes, too. Let me give you a little background on these before I jump into the recipe.
So, this might be TMI but here it goes. A couple of weeks ago, I was having a lot of stomach problems. Then, I had a food allergy and spent four hours nauseous, clutching my chest in pain. It was not fun. So, being who I am, I freak out, decide that I need to get my gut in check and decided to go cold turkey on dairy and gluten.
Marlene, fortunately and unfortunately, is a really good friend about this kind of stuff. So, instead of letting me have a day of the week where I eat dairy and gluten for the blog she decided we're gonna bake gluten and dairy-free goodies for a while. Be prepared for these recipes, to be honest, we've been surprised at how delicious things have been. For this recipe, we took a page from Liv B's vegan pancakes and added our own style to them.
RECIPE: What you'll need to make gluten free, vegan pancakes:
1 cup alternative milk (we used oat milk)
1 tsp apple cider vinegar
1 tsp vanilla extract
1 3/4 cup gluten free all-purpose flour
2 tsp baking powder
2 tbsp sugar
pinch of salt
1 tbsp vegan butter
toppings! We chose blueberries and bananas
Here's how you make vegan, gluten-free pancakes:
Start by combining your alternative milk and apple cider vinegar in a glass. mix. set aside. This is going to be your vegan buttermilk .
Turn your burner on to a medium heat. you don't want these to go too fast or too slow, or else they'll burn or they won't be browned at all. Heat is tricky, but you'll want to be patient here.
In a bowl, combine your dry ingredients. Then pour in your vegan buttermilk and vanilla. You do not want to over mix this batter. ours got a little over mixed and i think that's why they aren't as fluffy as we wanted them to be. So, I cannot stress this enough, DO NOT OVER MIX. I used a 1/4 cup to scoop the pancakes onto the burner.
These pancakes take about two minutes per side and make about eight pancakes.
We love a good brunch and these are the perfect addition to a brunch. 10/10 would recommend, you'll be as surprised as we were to find out how delicious these are!
