fudgey, delicious brownies

Friends, family, people who like brownies. Please, please, please pay attention to this recipe because it is going to blow your damn mind. Now, I must admit, I am not a brownie girl. I don't even consider myself a chocolate girl. BUT! THESE BROWNIES WERE SO FREAKING DELICIOUS.

Like, excuse me, look at these brownies.

They're gluten free, dairy free and still have a shine on the top. Gimme.

Okay, okay, let me give you what you came here for. The recipe for these babies.


Here's what you need to make the most delicious fudgey, gluten free, dairy free brownies:

4 large eggs

1 1/4 cups cocoa powder, unsweetened

2 tsp salt

1 tsp baking powder

1 tsp espresso powder

1-2 tbsp vanilla extract, depending on how you like it.

1 cup (2 sticks) vegan butter, earth balance works best

2 1/4 cups sugar

1 1/2 cups measure for measure gluten-free flour

2 cups chocolate chips.

Here's how you make these babies:

(we've adapted this from the king Arthur recipe)

Preheat the oven to 350F. Lightly grease a 9" x 13" pan. We put parchment paper on the bottom so that we could pull the brownies right out of the pan.


Crack the 4 eggs into your stand mixer (or into a bowl if you're using a hand mixer). Beat them at medium speed with the cocoa, salt, baking powder, espresso powder, and vanilla for about 1 minute. The goal here is for the batter to look smooth.


In a microwave safe bowl, melt the butter, then add the sugar and stir to combine. Because we used vegan butter, this looks a little different, you get something like the texture of applesauce rather than a well combined butter and sugar mixture. However, you want this hot and mixed as best you can because I'm pretty sure this is what makes a shiny brownie!


Add the hot butter-sugar mixture to the egg-cocoa mixture, mixing until smooth. Add the flour and mix until smooth.


Then add chocolate chips. We used dairy free, soy free, gluten free, all the free chocolate chips from enjoy life. We did one cup of semi-sweet and one cup of chocolate. Next time we make these, we think we'll do one cup of chips and one cup of some sort of nut for a little bit of crunch.


Bake the brownies for 32- 35 minutes, until a toothpick inserted into the center comes out clean. Sometimes it's hard to tell because of the chocolate chips, but don't over-bake these. 35 minutes is plenty of time! We suggest cooling these before serving, but feel free to eat them out of the pan while they are hot!
